1 1/2 cups corn kernels
1/3 cup flour
1/3 cup yellow cornmeal
1 jalapeƱo pepper, seeded and diced
1 red bell pepper, diced
1 tablespoon sugar
1 lime, juiced
2 garlic cloves, minced
1/3 cup chopped cilantro (2 tablespoons dried)
1 egg, lightly beaten
1/4 teaspoon salt
1/4 teaspoon pepper
Preheat the oven to 375 degrees.
Combine all ingredients in a large bowl and mix well.
Divide the mixture among 6 large muffin cups and press down with the back of a spoon to flatten.
Cook for 28-33 minutes, or until slightly golden on top and set.
Let cool for several minutes before unmolding.
